to be honest guys, all these micros are to slow for anything meaningful. If one wants to build such a device just to BUILD it for fun..that is okay. But as a tool better look for one of these ready to run devices. I own one from ost2002.com got it a year ago for 200 bucks ( 40 mhz 2 channel USB ). If you look for something universal...try labjack or the like...but theay are also slow..up to 500kc

pico scope is value for money upto 25 mhz. If you can spend a bit more 100 mhz Bitscope is a great tool. BTW Bitscope started off as a DIY

I am using the 2150 model with 60 MHz BW. It is quite a handy tool when you are working with things like SPI, I2C ,USART etc.
