Does anyone have updated AVR Coff (Common Object File Format) specification document? 

I only found a quite old prelimary document avaiable in the internet.

Now popular ELF or extcoff. ELF in Proteus, EXTCOFF in AVRStudio & AtmanAVR. Are You want to create something? Converter ? I not have info but i interesting for my education.

I feel interested about coff format/ELF format for AVR. 

Where can I find the detailed information about these two formats?

I not search, but you can try to send your ask to atmel. AVRStudio is a free product, may be info also free.
