You can check this book "Numerical Recipes in C", which is free.
http://www.nr.com/
It is intended for PC, but you could easily port it PIC18

pic18 ( virtually any of them ) is not a good choice for real-time fft, your bandwidth is going to be very limited and the ammount of 32bit math you can pack into the eeprom will be small. For audio frequencies or above chose a dsp ( or dspic ). Buti dont know the application so am guessing?
