I use vuescan for images and adobe acrobat for texts

Try Silverfast, I've been using it for a while and it kicks ass...

Hi,

I think Abbyy FineReader is the most user friendly scanner program.It's very sipmle and recognition capabilty is very very high (Turkish, German, etc special characters). It has got PDF save function. Program support wide range of recognition languages and output file formats. I also used Abbyy ScanToOffice and PdfTransformer programs they are very good too.

Scansoft Paperport is an another good alternative for archiving. I prefer this one to any other (like Abby FineReader).
