Hi matelda, the best way to do it is using AT commands. The first thing to do is to look for a cellular that support them.

Hello matelda,
try the following links:
1.  http://www.traud.de/gsm/
2.  http://www.wrankl.de/SMST/SMST.html
3.  http://www.riccibitti.com/tinyplanet/tiny_intro.htm   (Nice one)
4.  http://www.dreamfabric.com/sms/      (Very informative)
5.  http://www.frisnit.com/sms/
6.  http://www.activexperts.com/activsms/sms/   (Nice one also)
7.  http://www.roundsolutions.com/uk_products.htm
8.  http://www.m2mtelemetry.com/html/purchase.html

You can use a GSM phone but you need a cable (serial rs232) in order to send AT commands to it and read messages from it.
SonyEricsson and Siemens are good for this job (the majority of their pones work with no problem)
Good Luck
P.
