I found that searches on ebay for things like 'Aptina' , 'Omnivision', etc turns up a lot of varied sensor breakout boards, generally with datasheets of one form or another, and sometimes with example code. It can take a long time, but you should trawl through every vendor, because some will have better/later-rev documents than others.
