For a really simple meter, use a multimeter with a diode test range and connect it to a silicon diode, reading the forward diode voltage. At room temp it should be around 600 millivolts or so. Immerse it in melting ice, and record the reading, hold it just above boiling water and record the reading, plot the two readings on graph paper and just interpolate your temperature from the graph.

Really simple, and needs no special tools. Would be a bother if you need to make more than a few readings of temperature, and the calibration can be a little difficult to do precisely.

What will be the temperature range you are looking to measure and what will be the indicator you are to see the the change.
Thermocouples, NTC, PTC, diodes are all temperature detectors you can use. Please tell us some more about your plan. What will be the accuracy. We can find you something useful.

The simple temp meter is NTC + Resistor application.

It's not a temperature meter, it just indicates if the sensed temperature is above or below the set-point. It also uses no hysteresis or feedback. A crappy little circuit, like so many out there on the web.
